Nutrition of the Gluten Free Diet

The transition to a gluten free diet can be one that you can really benefit from.  But sometimes, it is not just as easy as cutting gluten out of your diet.  Today, I had the opportunity to speak to Cathy Cohn of Better Living Through Nutrition, a certified Nutrition Consultant well versed in the gluten free diet.  Speaking to Cathy brought up a very good conversation about people who are just finding out that they are gluten intolerant, gluten sensitive or Celiac.  These conditions can go undetected for years.  Imagine how much damage may have been caused in that time.  Chances are, you may very well have a damaged small intestine.  Cathy is there to help.  She can help guide you to rebuilding your small with the correct nutritional support.
